Smoked, much flavoured due to the streaky meat, it is very tasteful for the brine gives it the distinctive flavour of the region. It’s excellent to prepare “cozido à portuguesa” (Portuguese stew), to stuff trouts from our rivers and other fishes; perfect to add to bean’s rice, together with our smoked pork sausage.
