Meat cut from the thigh of a pig without hide, bone and cleaned up. Time is one of the main condiments used in curing to which it should be added the traditional brine and the slow process of curing with holm oak wood. Serve it in lean slices in a way that each one has a part of fat in order to emphasize the homemade savour.
