Traditional brine: 

With Salt Flower (Fleur de Sel), Salt from Tavira (a city in the south of Portugal), in Vinha D’Alhos (a combination of wine and garlic).

Prolonged curing of the product.
Prolonged maturation of the meat.
Use of natural tripe.
