‘BRÁS DE BACALHAU’ (Cod mixed with potato chips and egg) AND ‘FARINHEIRA DE PRESUNTO E AZEITONAS’ MINHOFUMEIRO
For the cod ‘à Brás’:
250g cooked and chipped cod
150g shoestring potatoes already fried
Olive oil as needed
Chopped parsley as needed
Salt and pepper as needed
1 ‘Farinheira de Presunto e Azeitonas’ Minhofumeiro
Water as needed
Sauté the onion cut into slices in the olive oil.
In the meantime put a pan over the heat and cook the ‘Farinheira de Presunto e Azeitonas’.
When the onion is cooked add the chipped cod, the shoestring potatoes and season with salt and pepper if necessary.
Slice the ‘Farinheira de Presunto e Azeitonas’ into slices and mix in with the cod.
Beat the eggs together with the parsley and add to the previous preparation.
Let the eggs bake slightly.
Plating up and finishing:
Place the cod ‘à Brás’ and the ‘Farinheira de Presunto e Azeitonas’ on a round plate with the help of a round mould, garnish with olive oil from black olives and chopped parsley.
