CHEESE PIE AND ‘FARINHEIRA CURA NATURAL’ (Naturally cured ‘Farinheira’)

200g puff pastry
1 ‘Farinheira cura natural’
150g (Portuguese) Flemish cheese
2dl cream
4 eggs
1 tsp thyme
Salt, pepper as needed


Put the puff pastry into a mould and with a fork, poke the dough and set aside.
Put a pan with plenty of water to boil; when it comes to a boil put the ‘Farinheira cura natural’ and when it boils again immediately turn off the heat and let it rest for 3 minutes. After this time, remove the ‘Farinheira cura natural’ and let it cool down to remove the skin and reserve the filling.
Mix the eggs with the cream until you get a homogeneous base, add the ‘Farinheira cura natural’ filling and mix everything very well.
Add the diced Flemish cheese, mix the thyme and rectify the salt and pepper seasoning to taste.
Place the ‘Farinheira cura natural’ preparation in the mould and bake at 180ºC for 25 minutes.
Let it cool before removing from the mould, serve with a mixed salad (tomato and lettuce salad with sliced onions) for a quick meal.
