Clams with MINHOFUMEIRO cured meats

INGREDIENTS:

– 300g good-quality clams
– 2 cloves garlic
– 50g SMOKED BACON
– 8 slices ONION CHOURIZO
– 1dl dry vinho verde
– 1 bunch fresh coriander
– 1 lemon

PREPARATION:

Place the clams in a basin of water and stir them around gently. Drain and repeat 3 times to remove all traces of sand. In a saucepan, fry the Smoked Bacon and the slices of Onion CHOURIZO in some olive oil. Add the finely chopped garlic. Stir well and then add the clams. Season with salt and pepper. Add the dry vinho verde, half the bunch of fresh coriander, finely chopped, and cover. Cook until the clams have opened. Before serving add the rest of the finely chopped fresh coriander and the lemon juice. Serve immediately, with hot bread.
