COZIDO À MODA DO MINHO (‘MINHO STEW’) WITH MINHOFUMEIRO TRADITIONAL SAUSAGES

INGREDIENTS
500g cow shank
2 pork shoulders
2 pig ears
500g chicken
400g pork spare ribs
200g Smoked Belly
2 Meat Sausages
2 ‘Farinheiras cura natural’
2 Onion Sausages
200g Smoked Loin
200g Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
1 ‘Salpicão Serra D’Arga’
500g Portuguese cabbage
4 carrots cut in half lengthwise
2 turnips cut into quarters
8 medium potatoes, cut
Salt and olive oil as needed

 

PREPARATION
In a pan with water, put the cow shank along with the pork. When it begins to simmer, add the Smoked Belly, the chicken, the Meat Sausages, the ‘Farinheiras Cura Natural’, the Onion Sausages, the ‘Salpicão Serra D’Arga’, the Smoked Loin and the ‘Picnic Gammon’. Remove the meat and the Minhofumeiro® Traditional Sausages as they get cooked.
In the same cooking water, add fresh water and let it boil again. Drizzle with olive oil and cook the potatoes, the carrots, the turnips and the cabbage. At the time of serving, arrange the cut meat and the Minhofumeiro® Traditional Sausages in a deep platter, the vegetables surrounding the meat and drizzle with some of the boiled water. Serve with white rice.

TIP
Use fresh meat, Minhofumeiro® Traditional Sausages will give the dish an authentic taste.
