MASSA À LAVRADOR (‘FARMER’S PASTA’) ENRICHED WITH MINHOFUMEIRO TRADITIONAL SAUSAGES
INGREDIENTS
400g pork spare ribs
1 cooked pork ear
1 sliced Meat Sausage
200g cubed Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
100g sliced ‘Salpicão Serra D’Arga’
300g previously cooked red beans
200g macaroni noodles
100 g onion
2 garlic cloves
1dl red wine
30g chopped parsley
PREPARATION
Braise the chopped garlic and the onion cut into slices with olive oil and let it brown a little. Then add the pork ribs, cut into pieces, and let it brown. When you get the desired colour, pour the red wine and let it stew over low heat. Add the pork ears, the slices of Meat Sausage and ‘Salpicão Serra D’Arga’ and the cubes of ‘Picnic Gammon’. Drizzle with boiling water and let it cook for 5 minutes more before adding the beans. Finally, add the macaroni noodles and let it cook slowly. At the time of serving sprinkle with chopped parsley.
