Minhofumeiro salt cod

INGREDIENTS:

– 4 salt cod fillets
– 800g potatoes
– 2 medium onions
– 1 tablespoon butter
– 100g sugar
– 1 MEAT CHOURIZO
– 200g SMOKED BACON

PREPARATION:

Boil the potatoes in salted water for 10 minutes, drain and leave to cool. Slice and dress with olive oil. Slice the MEAT CHOURIZO and the SMOKED BACON. In an oven-proof dish, make a layer of potatoes, then a layer of MEAT CHOURIZO, another layer of salt cod with a drizzle of olive oil and finally a layer of SMOKED BACON. Bake at 180 ºC for 8 minutes. Meanwhile slice the onion into half-moons and sauté in butter. As soon as the onion starts to colour, add the sugar and mix well. Serve the salt cod topped with the caramelised and a salad to accompany.
