MOZZARELLA CHEESE ON A SKEWER AND ‘ALHEIRA DE VITELA’ (Veal Alheira) CROQUETTES MINHOFUMEIRO

For the breaded mozzarella cheese:
400g mozzarella cheese
Toasted bread
1 small bundle of parsley
1 garlic clove
3 eggs

For the ‘Alheira de Vitela’ croquettes:
1 ‘Alheira de Vitela’ Minhofumeiro
1 egg
Breadcrumbs as needed
Flour as needed
Peanut oil as needed

For the cherry tomato salad:
200g cherry tomatoes
200g arugula
Extra virgin olive oil as needed
Balsamic vinegar from Modena as needed
Oregano as needed

Cooking:
In the mincer chop the bread with the parsley and garlic.
Cut the mozzarella into large cubes, dip them in flour, egg and the bread mixture.
Open the ‘Alheiras de Vitela’ and peel them off. Sprinkle your hands with flour and form balls.
Dip them in flour, beaten egg and breadcrumbs.
On a bamboo skewer stick a ‘Alheira de Vitela’ croquette alternating with a mozzarella cube.
Wash the arugula and the cherry tomatoes, cut into quarters and season with olive oil, balsamic vinegar and sprinkle with oregano.
