MUSHROOMS FILLED WITH MINHOFUMEIRO TRADITIONAL SAUSAGES

INGREDIENTS
500g fresh mushrooms
3cl olive oil
100g onion
10 g garlic
50g Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
50g Meat Sausage
50g Smoked Belly
1cl red ‘vinho verde’
15g wheat flour
30g chopped parsley
100g crumbled cornbread
Salt and pepper as needed

 

PREPARATION
Wash the mushrooms, remove their insides and make a cavity. Finely chop the stems as well as the leftovers from the inside of the mushrooms and set aside.
Braise the chopped onion and garlic with olive oil and let it brown.
Add the minced ‘Picnic Gammon’, Meat Sausage and Smoked Belly and let it reduce. Then add the red ‘vinho verde’ and let it braise a little.
Dissolve the flour in cold water and add this to the braise, season with salt and pepper to taste and add the chopped mushroom stems, sprinkle and mix with the chopped parsley.
Stuff the mushrooms and sprinkle with the crumbled cornbread, drizzle with olive oil and bake for five minutes at 180ºC.
