Nest of bean sprouts and bamboo shoots with Farinheira, broa croutons and fried quail egg
INGREDIENTS:
– 150gr bamboo shoots
– 150gr bean sprouts
– 50ml olive oil
– 1 lime
– 30ml soy sauce
– 50gr. sugar
– 2 FARINHEIRAS
– 4 quail eggs
– 100ml chicken stock
– black pepper, fresh coriander and finelychopped ginger
– 1 cloves garlic
PREPARATION:
Sauté the bamboo shoots and bean sprouts in half the olive oil, add the soy sauce, finely chopped ginger and then the chicken stock. Season with sugar, salt and black pepper. Remove the skin from FARINHEIRA, season with olive oil, finely chopped garlic, salt and black pepper if necessary. Bake in a 180 ºC oven for 15 minutes. Remove from the oven and add the fresh coriander and lemon juice. Roast the cubes of broa at 200 ºC for 7 minutes. Arrange a nest of sautéed bamboo shoots and bean sprouts on the plate. Top with the FARINHEIRA and the croutons, in that order.
