NEW POTATOES STUFFED WITH SMOKED BELLY AND ROSEMARY
INGREDIENTS
600g new potatoes (small)
0.5dl olive oil
100g onion
10 g garlic
1 tbsp fresh rosemary
200g Smoked belly
Coarse salt as needed
Grated cheese as needed
PREPARATION
Cook the potatoes with the skin in plenty of water with a little salt. Once cooked remove them from the water and let them cool down.
Cut the top of the potato carefully not to break. With a teaspoon gently remove the inside of the potato and set aside.
Braise the chopped onion and garlic with olive oil, let it brown. Add the diced Smoked Belly and let it reduce. Then add the fresh rosemary and coarse salt to taste, mix and remove from heat to cool down.
Place the Smoked Belly filling in the previously reserved potatoes, sprinkle them with cheese and bake them until they turn slightly golden.
These potatoes can be served as a side dish of roast meat or simply with a salad for a light meal.
