‘OLD SCHOOL’ TORTILLA WITH ‘PICNIC GAMMON’ AND ONION

INGREDIENTS
150 g cooked potatoes
5 eggs
50g onion in half moons
150g Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
5cl olive oil

 

PREPARATION
Put a non-stick frying pan on the cooker with the olive oil and the onion and let it brown a little. Add the sliced boiled potatoes, the cubed ‘Picnic Gammon’ and mix everything very well. Add the previously beaten eggs to cover the entire frying pan, and let it cook very slowly, stirring occasionally. When it’s almost done, turn the tortilla (with the help of a plate) and put it back in the frying pan to cook on the other side, always slowly so that it does not gain any colour. Remove from the frying pan and put it on a plate.

“Great for a winter snack or even a light meal, accompanied by a mixed salad (tomato and lettuce salad with sliced onions). It can be served hot or cold! ”
