ONION SAUSAGE ROLLS OVER GREEN APPLE CREAMY RICE

INGREDIENTS
ROLLS
8 Brick pastry sheets
3 cl olive oil
2 Onion sausages
50 g butter
20 g sun-dried tomatoes
150 g diced apple

APPLE CREAMY RICE
100 g Granny Smith apples
50 g onion
3 cl olive oil
150 g ‘carolino’ rice
Salt and pepper as needed

PREPARATION
ROLLS
Open the Brick pastry sheets. Boil the Onion Sausages in plenty of water for four minutes, remove and let them cool down. Open them, remove the filling by scraping it well. Put a pan on the cooker with the butter, add the diced apples and let them brown a little. Add the stuffing of the Onion Sausage, the sun-dried tomatoes in very thin strips and mix everything very well. Fill the Brick pastry sheets with the previous preparation, roll them and brush with olive oil.
Bake at 160ºC for five minutes.

APPLE CREAMY RICE
Braise the chopped onion with olive oil until it browns.
Add the zest of an apple with the skin and the juice of half a lemon, add the rice and let it braise a little, season with salt and pepper.
Add twice the water volume of the rice and let it cook over very low heat. After fifteen minutes the rice is cooked. Add a tablespoon of butter and mix everything very well. Mould the rice with the help of a ring/mould and on top place the rolls of Onion Sausage.

Serve very hot.
