PEA CREAM WITH ONION SAUSAGE
400g fresh or frozen peas
300g peeled potatoes
100 g onion
100g leek (the white part)
1dl olive oil
1 Onion Sausage
20g chopped chives
Bring a pan to the heat with olive oil, the onion in half-moons, the leek, the peas and potatoes. Let it stew a little.
Then add two litres of water and let it boil.
Aside, boil the Onion Sausage in plenty of water for 5 minutes, then cut it into thick slices and set aside. In the meantime, grind the soup with a hand blender until it has the consistency of a cream, add the cream and let it cook a little more. Place two slices of Onion Sausage and the chopped chives on deep plates where the cream will be served.
