POTATO DOUGH BUNS WITH MINHOFUMEIRO TRADITIONAL SAUSAGES

INGREDIENTS
Potato buns:
3cl olive oil
150g butter
40g chopped onion
3dl milk
7dl lukewarm water
150 g cooked potatoes
450g wheat flour
1 tbsp chopped parsley
Salt and pepper as needed

For the filling:
4cl olive oil
100 g chopped onion
100g Smoked Belly
100g Meat Sausage
100g ‘Salpicão Serra D’Arga’
Black pepper and ‘piri-piri’ pepper (chili) as needed
Egg and breadcrumbs

 

PREPARATION
Braise the olive oil and the butter, add the onion and let it brown. Add the milk and the lukewarm water.
Add the hot mashed potato, 1 tablespoon of chopped parsley, season with salt and pepper and mix very well.
Gently incorporate the flour.
Remove the dough from the heat and place it on a table sprinkled with flour to roll it out after it turns cold.
Braise the onion with the olive oil, along with the minced Smoked Belly, Meat Sausage and ‘Salpicão Serra D’Arga’
Let it braise well, season with pepper and ‘piri-piri’ pepper to taste.
With the palm of your hand sprinkled with flour, put a portion of potato dough, in the middle stuff with the minced Minhofumeiro® Sausages and form small balls, let it chill for 3 hours.
Dip the balls in flour, egg and breadcrumbs and fry in very hot oil.
Serve with lettuce and tomato salad.
