800g potatoes
2 Onion sausage
2 tbsp butter
150g mozzarella cheese
1 tsp oregano
1 tbsp flour
2dl cream
1dl milk
3 eggs
Salt, black pepper as needed
Grated cheese as needed


Cook the whole potatoes with the skin in plenty of water with a little salt. Once they are cooked, let them cool down. Remove the skin, cut into thin slices and set aside.
Aside, put a pan with plenty of water to boil; when it boils put the Onion Sausages and let it simmer for 2 minutes.
Remove from the heat and let it rest for another 3 minutes. Remove from the water, remove the stuffing of the Onion Sausages and set aside.
In a frying pan, put a little butter and the stuffing of the Onion Sausages, wrap everything very well and let it reduce a little.
In a baking tray (that you can serve at the table with), place a first layer of the Onion Sausage preparation, cover with a portion of mozzarella cheese, and top it with a layer of potato slices. Alternate the layers and finish with a potato layer.
In a bowl, mix the eggs with milk and cream, add the oregano and rectify the seasoning with salt and pepper to taste. Pour this on top of the potato millefeuilles and Onion sausage. Finish by sprinkling with plenty of grated Parmesan cheese.
Bake at 180ºC for 30 minutes until it gains a golden crust.
Serve with a sautéed vegetables salad.
