200g minced veal
100g minced smoked belly
150g cooked peas
1 garlic clove
1 onion
40g flour
600g mashed potatoes
1 tsp chopped parsley
Salt, black pepper as needed

To bread:
1 egg
Flour as needed
Breadcrumbs as needed
Oil as needed


Cook the potatoes in plenty of water with a little salt. When cooked reduce them to puree and set aside.
Aside, braise the olive oil with the chopped onions and the garlic on a pan, let it brown a little and add the minced meat and minced smoked belly, the pre-cooked peas and the parsley; stir everything very well and let it stew a little.
Dissolve the flour in a little cold water and add it to the Smoked Belly preparation, let it stew for another 4 minutes on low heat. Remove from heat and let it cool.
In the meantime, sprinkle your hands with flour and add a portion of mashed potatoes. Make a hole and fill it with the smoked Belly preparation. Close it tightly, giving it the shape of a croquette. Reserve it in the cold.
Dip the ‘surprises’ of smoked Belly in flour, egg and breadcrumbs. Fry in very hot oil. Take it out of the oil and let it drain on an absorbent paper.
Serve with a mixed salad (tomato and lettuce salad with sliced onions).
