SALMON FILLETS WITH SMOKED ‘PRESUNTO DA PÁ’ (‘PICNIC GAMMON’)

INGREDIENTS
600g salmon fillets (clean from pin bones and skin)
12 slices of very thin sliced Presunto da Pá (sort of ‘Picnic Gammon’)
500g pre-cooked potatoes
100 g chopped onion
20g fresh thyme
50 g butter
Black pepper and salt as needed

 

PREPARATION
Wrap the sliced salmon fillets with slices of ‘Picnic Gammon’ and place them in a baking tray. Cover them with aluminium foil and bake at 140°C for 25 minutes. Braise the chopped onion with olive oil and the sliced potatoes, mix everything very well and let it brown. Add the chopped thyme, season with salt and milled black pepper to taste. Arrange the potato preparation on a plate and, on top, the salmon wrapped in ‘Picnic Gammon’.
