SMALL CHRISTMAS SNACK
INGREDIENTS
300g Alentejo or Favaios bread
1dl olive oil
200g frozen or fresh chestnuts
100 g sweet potato
100g Chopped Meat Sausage
50g cubed Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
20g chopped parsley
50 g onion
10 g garlic
Black pepper as needed
Sea salt as needed
Chilli pepper in olive oil as needed
PREPARATION
Braise the chopped onion and the crushed garlic with olive oil and let it brown a little. Add the minced Meat Sausage and the small cubes of ‘Picnic Gammon’, mix everything very well and remove from heat. Aside, cook the chestnuts and the sweet potato in abundant water. When they are cooked, drain them well and crush everything into puree. Add the braise to the chestnut and sweet potato puree and set aside. In the meantime, soak the bread in cold water. Drain it and add to the previous preparation. Mix well and season with salt, black pepper, and some chilli pepper in olive oil. Sprinkle with the chopped parsley. Place the ‘Farinheira cura natural’ preparation in the mould and bake at 180ºC for 10 minutes.
CHEF’S SUGGESTION
Serve very warm, accompanied by a lettuce salad.
