Smoked Loin with curry and vegetables


– 450gr SMOKED LOIN in slices
– 40gr red curry paste
– 200ml coconut milk
– 1 stalk lemongrass
– courgette
– 1 red pepper
– 2 cloves garlic, finely chopped
– 2 chilli peppers
– 30ml vegetable stock
– 1 lime
– fresh coriander
– cherry tomatoes
– leeks
– canola oil



Season the SMOKED LOIN with the curry paste, half the finely chopped garlic, salt and 20 ml coconut milk. Heat a dash of oil in a frying pan, sauté the SMOKED LOIN with the rest of the leeks, peppers, courgettes, finely chopped and seeded chillies and the lemongrass. Add the vegetable stock and reduce by half. Finally add the remaining coconut milk, the cherry tomatoes and simmer for 2 minutes. Season and finish with lime and fresh coriander.
