TOMATOES STUFFED WITH MEAT SAUSAGE AND SMOKED BELLY

INGREDIENTS
700g vine tomatoes
3cl olive oil
100 g chopped onion
10g chopped garlic
40g Meat Sausage
40g Smoked Belly
100g breadcrumbs
60G cheese cubes from São Jorge Island

 

PREPARATION
Wash the tomatoes and cut a sort of a lid; carefully remove the seeds without damaging the tomatoes.
Braise the chopped onion and garlic with olive oil and let it brown.
Add the minced Meat Sausage and the Smoked Belly and let it reduce. Finally sprinkle with the breadcrumbs.
Place the tomatoes on a baking tray, stuff them with the previous preparation and cover them with the cheese cubes from São Jorge Island.
Bake them in the oven at 250ºC until they turn golden.
Serve with lettuce salad and white rice.
