TURKEY PUFF PASTRY WITH MINHOFUMEIRO TRADITIONAL SAUSAGES
300g puff pastry
150g previously cooked and shredded turkey
2 Onion Sausages
100 g onion
100g cubed Smoked ‘Presunto da pá’ (sort of ‘Picnic Gammon’)
1 sliced Meat Sausage
1dl olive oil
2 tbsp wheat flour
2cl Port wine
Fresh thyme as needed
Chopped parsley as needed
Roll out the puff pastry on a previously floured table (the size of the baking sheet you will use to serve at the table). Meanwhile, cook the Onion sausages in abundant water. Then cut them into slices and set aside. Braise the chopped garlic and the onion cut into half moons with olive oil, add the diced ‘Picnic Gammon’ and the Meat Sausage, and let it braise well. Add the shredded turkey and the Onion Sausages. Add two tablespoons of wheat flour and mix everything very well. Then add a glass of Port wine and the cream, let it boil and thicken. Season with salt, black pepper, fresh thyme and chopped parsley to taste. Put this preparation in the baking sheet and cover with the puff pastry. Poke with a fork and bake at 180ºC for 25 minutes.
Serve very warm, accompanied by a green salad enriched with pine nuts and raisins.
